Cotija Cheese Breakfast Toast 3 Ways
USING COTIJA CHEESE
Did you know National Hispanic Heritage month starts on Wednesday, September 15, and ends on Friday, October 15, 2021? Today I’m using the authentic Hispanic-style Cotija cheese, to create these toasts as a new way of elevating the classic avocado toast.
WHY I CHOOSE REAL DAIRY PRODUCTS
I’m making my Cotija cheese toasts today with real dairy cheese. As you probably know from my other blog and social media posts, I’m a proud supporter of real dairy products. Real dairy products are rich in vitamin A, vitamin D, thirteen essential nutrients and high-quality protein.

I eat dairy products throughout any typical day for me. Here’s an example of how I do that!
In the morning I add 2% milk to my coffee
I typically add cheese to my salads or bowls for lunch
I often have yogurt and crushed nuts as a snack, or cheese cubes and a piece of fruit
I typically top stir frys or sheet pan meals with cheese for dinner, or use a dairy-based sauce like Alfredo sauce or pesto

Alright let’s get to the recipe!
COTIJA CHEESE TOAST RECIPES
Prep: 5 minutes (each)
Cook: 5 minutes (each)
Total: 10 minutes (each)
Servings: 1 (each)
Ingredients:
1 slice whole grain bread
½ avocado
3 Tbsp Real California Cotija cheese, crumbled
Topping 1: 1 egg
Topping 2: 2 Tbsp bacon bits
Topping 3: ¼ cup arugula, 2 tsp ranch dressing, and 1 tsp hot sauce
Directions:
Toast bread
Remove avocado half from skin and add to a bowl. Mash it with a fork so it becomes a guacamole texture.
With your hands, crumble block of Cotija cheese, as shown in picture below.
Add mashed avocado to toast. Top with Cotija cheese.
Topping 1: Spray a non-stick pan with an oil spray. Turn heat to medium for ~30 seconds. Crack in egg, and let fry for 1-3 minutes (depending on how cooked through you like your fried eggs!). Add egg onto Cotija cheese toast.
Topping 2: Sprinkle bacon bits onto Cotija cheese toast.
Topping 3: Add arugula, then drizzle ranch and hot sauce onto Cotija cheese toast.
